Start with three useful numbers: green tea at about 80°C for 1–3 minutes; black tea at 100°C for 3–5 minutes; and herbal or fruit tea at 100°C for 3–6 minutes.
Tea temperature and steeping chart
- Green tea: 80°C, 1–3 minutes
- Black tea: 100°C, 3–5 minutes
- Herbal or fruit tea: 100°C, 3–6 minutes
- White tea: about 80°C, 2–5 minutes
- Oolong: begin around 80°C, 2–3 minutes
These ranges are starting points. Leaf size, quantity and personal taste all change the result, so follow the package when it gives a more specific instruction.
How much loose-leaf tea should you use?
Begin with roughly one teaspoon per 180–250 mL of water. Large leaves and fruit pieces occupy more space, so weighing the tea gives a more repeatable cup.
Why does tea taste bitter?
Water that is too hot, too much tea, or a steep that is too long can increase bitterness and astringency. Lower the temperature for green tea and adjust the leaf amount before extending the steep substantially.
A simple four-step routine
- Use fresh cold water.
- Bring it to the temperature that suits the tea.
- Start timing when water meets the leaves.
- Remove the leaves when the time is up.
